Santi’s Tomato Soup

I am so thankful to be married to someone who loves to cook, and not only that, but Santi has become quite the chef! He has always loved experimenting in the kitchen, but his tomato soup recipe has been a long-time favorite and is so comforting during the winter months. It’s the easiest recipe and I promise you can’t make a bad version of it. Let me know if you try it!

Santi’s Tomato Soup

INGREDIENTS
1/2 lb. butter
1 lb. onions (about 3 medium sized), cut into 1/4-inch cubes
1/2 cup all-purpose flour
4 (28-ounce) cans diced tomatoes
1&1/4 cups chicken broth
1/4 cup sugar
1 tablespoon kosher salt
1 teaspoon celery salt
3/4 teaspoon pepper
3/4 cup half-and-half
2 tablespoons honey

INSTRUCTIONS
1. Saute onions in melted butter over medium-low heat until soft
2. Add flour and cook for 3 minutes without browing
3. Stir in tomatoes, broth, sugar, salt, celery salt and pepper.
Simmer on low for 30 minutes, stirring often
4. Add half-and-half and honey, then puree.
